Shane and I usually travel to Chatham most weekends in the summer where we spend time with our family and friends surfing, beach bumming, SUP’ing, clamming or my favorite, eating! It’s the ultimate summer treat and it only lasts 3 months (sad face)!
With the 4th of July right around the corner, I thought I would share with you our latest feast that was oh so yummy and perfect to throw together this Thursday or even into the weekend. I thought it would be nice to offer a little change up from your typical hot dog and pasta salad (although don’t worry, both carb and pig are still invited to the party!)
When I plan a special summer menu, I always try and think of just a few things, and hit the important ones. First I like to consider who we will be dinging with, and if they have any allergies or don’t care for anything (you want all your guests to enjoy the food!) Second I always have a grilled protein, because it’s so nice to enjoy outside and it’s such a short season. I suggest picking something local to your region and ALWAYS having a marinade. The grill can get really hot, so this helps not dry out the food and makes the flavors deeper. I always like to have at least two sides, preferably something green with a little something crunchy like nuts (or this fabulous green bean recipe), and something seasonal like corn (above), potato salad using fresh herbs or a whole wheat pasta dish. Last, a desert that also represents local fresh flavors! (Strawberries, duh!)
We had pork chops and mangos on hand, so of course my previous Mango Salsa recipe was a redo. Although I wanted to change it up a bit and make it a bit more fresh to accompany the pork, so we added some diced cucumbers in there which were delish! Our table setting might be what steals the show here (sorry, food!) Shane’s mom Debbie did an amazing job with this house and I still pinch myself every weekend when we sit down to dinner.
